The Flavour Files explore how familiar flavours appear across the drinks world and the memories they carry with them. This edition finds the taste of a 1990s and early-2000s childhood hiding in Canadian whisky, from banana candies and bubblegum to Cocoa Puffs and pecan pie.
Flavour has an uncanny ability to collapse time. A single aroma can return us to a childhood kitchen, a corner store, a holiday table or the back seat of the family car before we have consciously worked out why.
Psychologists refer to this as the Proust effect, named after the famous scene in Marcel Proust’s In Search of Lost Time, in which the taste of a madeleine dipped in tea unlocks a rush of childhood memories. Research suggests that memories prompted by smell and taste can feel especially vivid, emotional and immersive, creating the sensation of being transported back to another moment. It helps explain why tasting notes are never only objective descriptions of what is in the glass. We identify flavours by connecting them to things we have encountered before.
Those associations are not universal. Research into sensory and cultural memory shows that smells and tastes become embedded in family rituals, community traditions, formative experiences and ideas of home. Flavour can therefore act as both a personal time capsule and a cultural archive, preserving memories that may be individual, shared or passed between generations.
For this edition of the Flavour Files, we turn to Canadian whiskies that recall a 1990s and early-2000s childhood. Their flavours call to mind convenience-store candy, lunch-box treats, sugary breakfast cereals and familiar baked desserts, placing each whisky within the Baked or Candied Flavor Camps, and sometimes both.
The associations that follow offer only one way of reading the flavours in the glass. The same bubblegum note might recall pink Hubba Bubba for one drinker and bubblegum toothpaste or ice cream for another. The note may be recognizable, but the memory attached to it is personal.

With baked apple, cinnamon and soft grain sweetness, this whisky lands squarely in apple Danish territory. Distilled from 100 per cent organic BC Red Fife wheat, this first barrel release spent more than three years in new Hungarian oak. Yellow apple, sultana, vanilla, almond and clove fill out the pastry impression, while dusty wheat and tobacco keep the sweetness grounded.

Few desserts carry Canadian nostalgia quite like the butter tart. Created by former Forty Creek master blender Bill Ashburn, this cream liqueur combines whisky and dairy cream with layers of baked brown sugar, vanilla and butterscotch, evoking the gooey filling and caramelized edges of the classic treat. Beneath the sweetness, the whisky provides warmth and depth, bringing the familiar flavours of a homemade butter tart into the glass.

nostalgic note: bubblegum
On the palate, a noticeable note of pink Hubba Bubba emerges alongside soft cereal grain and vanilla. Made in the style of an Irish blend, this Canadian whisky brings together barley, malted barley, wheat and corn before aging in ex-bourbon casks. It is produced at Spring Mill Distillery in Guelph, which began distilling in 2019 inside the restored former Allan’s Mill & Distillery building, reconnecting the Sleeman name with a distilling history dating to 1836.

nostalgic note: banana candy
A bright, candy-like banana note recalls the chewy marshmallow candies once scooped from corner-store bins. That pronounced fruitiness was deliberately cultivated during fermentation, with distiller Matt Widmer using active dry distiller’s yeast and warm, 72- to 96-hour fermentations to encourage ester development. This fruity character is a signature of the distillery’s house profile.

Sons of Vancouver’s Off Brand Nordic Red Berry Gummies turns 100 per cent rye whisky into a trip through the bulk candy aisle. Aged for 3.5 to 4.5 years in ex-bourbon and new American oak, it bursts with bright red berry candy and cherry syrup, followed by sweet nougat and sarsaparilla root beer. A smooth, polished oak finish keeps all that candy-shop sweetness neatly in check.

This expression captures the sweet, toasted character of Honey Nut Cheerios, layering golden honey and cereal grain over a fruity single malt core. This is thanks to a pairing of whisky aged in ex-bourbon casks with 2.75 per cent local wildflower honey. Non-chill filtered, this whisky preserves its creamy texture without any cloying sweetness.

Sweet cinnamon layered over a toasted cereal note recalls Cinnamon Toast Crunch eaten straight from the box. Made from locally grown rye and malted barley, then aged in ex-bourbon and new American oak, it layers ginger, nutmeg and menthol with vanilla, honey and toasted grain. The rye’s spice and the malt’s biscuity sweetness meet in a flavour that feels straight from the breakfast table.

Okanagan Spirits BLK BRBN brings Cocoa Puffs to mind, but with considerably more depth than the cereal bowl. Aged for more than seven years in new American oak, its unusual mash bill of 54 per cent corn and 46 per cent chocolate and dark malted barley delivers cocoa cereal, toasted marshmallow and cinnamon mocha. Sweet corn, caramel and banana give way to mole spice, tobacco and cedar.
